In the most authentic heart of the region, amidst rolling hills that abound with wheat fields, majestic olive trees and vineyards, lies the winery that opens its doors for you to discover how the organic wine production process takes place.
The experience will begin with a guided tour of the vineyards surrounding the cellar; during this tour, the work carried out throughout the year will be explained to you, focusing on the environmental aspects and the cultivation method that is carefully followed.
The visit will conclude with a rich tasting of the best organic wines produced by the winery combined with other Apulian food delicacies.
The winery is located a few kilometres away from Alberobello, a Unesco World Heritage site thanks to its trulli.
The historic area of the farm, which was entirely built in stone according to the local architectural tradition, dates back to the 1400s and was originally a Franciscan friary.
They created an innovative system to irrigate the fields and drain rainwater.
Evidence of this ingenious project is preserved within the farmhouse itself providing an opportunity for a walk in the name of agricultural archaeology.
Later, the farmhouse also became a private enterprise for wine production.
The karstic valley in which our visit with tasting of Apulian wines takes place has a very special microclimate: very intense sunlight during the day and cool nights even in the height of summer. Hence, the possibility of producing not only red wines but also excellent whites and rosés.
The soils are calcareous/clayey.
The winery covers 20 hectares planted with the following types of vines:
The winery has been producing organically for 15 years; the wines are therefore all certified organic.
In the vineyard, almost all work is done by hand: from pruning to traditional harvesting. Tractor passage is kept to a minimum to safeguard the cultivated land.
Fertilisation is done by cultivating in alternating rows planting field beans, green manure of field beans in spring, and burying the shredded manure together with compost produced from the shredded pruning waste and cow manure (which comes from a small farm owned by the same company).
The grapes are harvested manually in the early hours of the day, when the fruit is at its freshest, so that the process is completed within the day.
The company only processes grapes that come from its own vineyards and takes care of all the steps of production up to bottling.
