This experience will be hosted by an authentic Apulian family, in a location situated in the very heart of Valle d’Itria: the ideal place to relax welcomed by the sense of hospitality, which is a typical Apulian trait.
The making class will be held by a Grandmother with a deep culinary experience: here in Puglia, our grandmothers were from an early age an essential help and contributed to take on household chores.
Thanks to their years of practice, our grandmothers are a true and irreplaceable culinary heritage, custodians of culinary secrets that will be happily shared with you.
Our Apulian Grandma will tell you the correct amount of each ingredient to make dough, the proper techniques to knead it until it reaches the right consistency keeping it soft, smooth and elastic. Then you will try to make typical Apulian pasta shapes:
You will able to make 3 traditional types of pasta, well-known here in Puglia:
Right after the making class you will cook the fresh pasta you made with your own hands. Set the table, boil water…all this waiting is worthwhile: a delicious steaming dish of pasta will be served to you.
Our Nonna will be happy to share with you one of the traditional Apulian recipes made by local peasants for their Sunday lunch, when all the family gathered around the table: succulent handmade orecchiette with fresh tomato sauce and beef braciole.
At the end of the class you will have the skills to make pasta for yourself at home!
The experience will end with the tasting of a traditional Apulian menu. After the preparation, you will taste the pasta prepared with your own hands. You will enjoy the traditional Apulian orecchiette served with tomato sauce and Brasciole (Braised Beef stuffed rolls with cheese, garlic, parsley and black pepper, slow cooked in tomato sauce).
All this combined with an excellent Apulian wine, of course!

Hi Marco, this was a great experience. As a tip for future – maybe you can think of adding to this class a sauce-making part. Maybe less pasta variety but then combined with the sauce preparation (maybe with semi-prepared ingredients that it does not cost a lot of time), so that the guests can have the full process.
