The experience

Taste Apulian artisanal cheese, mozzarella and burrata freshly made

The cheese tasting tour takes place in a dairy farm located in the charming Valle d’Itria, not far from the villages of Martina Franca, Locorotondo, Alberobello and Cisternino. Its ancient building dates back to the 17th Century, it is surrounded by cultivated lands, muretti a secco (dry stone walls), characteristic trulli made with stones, vineyards and olive groves.
The tour begins admiring the magnificent surrounding rural landscape, which concentrates some of the main landscape and architectural icons of Puglia. It continues with a visit to the small private consecrated chapel and to the rural core of the farm: the ancient central courtyard.
The trulli made with local stones surround the courtyard and in the past they were the stables used to shelter animals. Now, they are comfortable places of stay well-equipped with all modern comforts, fully restored respecting their original rural identity.
The guided tour then moves to one of the most charming locations of the farmhouse: the cheese factory. This is the place where delicious dairy products know and appreciated all over the world are processed every day. Who doesn’t know the creamy burrata, the delicious mozzarella, the soft fiordilatte or the fine caciocavallo?
It will be possible to see master cheesemakers while they are hand-making these excellent products and you will also have the opportunity to taste some of the freshly made products. What a pure delight!
The tour ends at the cattle sector, where the precious fresh milk is milked every day and then brought to the cheese factory where it is processed into dairy delicacies.

The experience will take you in the rural heart of Puglia, in an ancient farmhouse, with its massive stone walls painted with white lime and with its characteristic trulli, with their unique shape.
The tour is an educational experience about the ancient Apulian rural world, which is here still preserved, thanks to the farming and breeding techniques.
The Apulian food and wine tradition is here stille alive; its authenticity derives from the agricultural productions, which respect the seasonality of the products and the surrounding environment.

The farm’s producing facilities

This experience offers you the opportunity to taste ingredients grown at or derived from the farm.
The farm holiday preserves in fact within its ancient stone walls:

  • the dairy farm, where every day the fresh milk, milked by the cattle bred at the farm, is transformed into fresh cheeses such as mozzarella, burrata, caciocavallo and ricotta;
  • the organic vegetable garden, the green heart of the farm in which all products used to make a typical Apulian menu are cultivated and harvested: salad, tomatoes, zucchini, eggplants, potatoes, turnips and many other products;
  • the cattle and pig breeding, whose meat and milk are produced respecting the animals mobility and healthy nutrition. All of this is of course a synonym with authenticity.

Tasting the products of the farm

The tour ends with a rich tasting of the products grown at and derived from the farm animals: a blaze of taste and authenticity you must try!

The tasting menu is composed as follows:

  • A selection of local cold cuts such as Capocollo from Martina Franca, soppressata and salami;
  • A selection of seasoned cheeses such as caciocavallo;
  • A selection of fresh cheeses such as mozzarella and burrata;
  • Bakery products: such as bread baked in a wood-burning oven;
  • A glass of Apulian wine;
  • Water.
