The chef Gianfranco Palmisano will guide you through a high quality culinary journey. Food and wines will be paired to make you experience the best of its cuisine. Only seasonal products cooked at low temperatures and with long times to preserve the flavor, texture and precious nutrients.
The foods, cooked in a vacuum in hot water or in a steam oven, retain their taste to present it intact to your palate. A pleasure that you absolutely must try!

The “Sensazioni del Territorio” menu that you can taste at the Gaonas restaurant is as follows:

    • hen’s egg of farm raised on the ground, creamy potatoes and scorzone della Murgia;
    • violet artichoke caramelized toast, farm caciocavallo, almond pugliesi and Senese crusher pepper;
    • risotto “impetuous” (aged farmhouse cheese from Puglia), farmer’s turnips, clams and anchovies;
    • bowler 2.0, ginger, anchovies, caviar and buffalo bell Dop;
    • apple Murgina from Martina Franca dop, almond crumble from Puglia and ice-cream.

For this reason I cook my dishes at low temperature preserving the nourishing properties and taste of the ingredients I use.
